WHAT DO YOU NEED TO MAKE VEGAN BISCUITS
– Flour
– Salt
– Baking Powder
– Plant-based Milk, unsweetened
– Lemon Juice
– Vegan Butter

HOW TO MAKE HOMEMADE VEGAN BISCUITS
First, you’ll want to gather some flour, salt, and baking powder. Add them to a mixing bowl and whisk together.

Add soft, vegan butter in slices and mix with your fingers, or a dough blender, until the dough is crumbly.

Then you’ll add your vegan buttermilk – a combination of plant-based milk and lemon juice.

Lightly knead dough a few times in bowl, then transfer to a lightly floured surface. Knead about three more times – making it no more than six times total.

Flatten dough with your hands to about 1-inch thickness. With a biscuit cutter, cut out 4 biscuits at a time. Fold and flatten the remaining dough and cut out 2 more biscuits, until all dough is used. You should end up with about 7-8 biscuits.

Place your biscuits on parchment paper, or a lightly greased baking pan. Place them touching each other, so the biscuits rise more.

Take two fingers and gently press in the center (helps with rising), then brush the tips with melted vegan butter.

Bake for 10-15 minutes on 450 degrees, until golden brown.

Let them cool for a few minutes, then serve with your favorite breakfast sides, vegan gravy, or homemade jam.

HOW TO STORE VEGAN BISCUITS
This recipe is BEST the first day and not recommended to store for more than two days. The biscuits lose their flavor over the next day, so eating them fresh is recommended.

Ingredients:

  • 1 cup unsweetened almond milk
  • 1 tbsp lemon juice
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 cup vegan butter

Instructions:

  1. Preheat oven to 450 degrees.
  2. Add lemon juice to almond milk and set aside. This will be your vegan buttermilk.
  3. In a large mixing bowl, whisk together dry ingredients.
  4. Add slices of cold butter and use fingers to combine the dry ingredients and butter. Dough will be crumbly.
  5. Using a wooden spoon, slowly stir as you add the vegan buttermilk. Add 1/4 cup at a time, you may not use all of it. Stop when the dough molds together.
  6. Gently transfer the dough to a floured surface and sprinkle the top of the dough with more flour. Gently knead dough about 5 to 6 times, folding the dough over itself. This will give you the flakiness.
  7. Form dough into a 1-inch disc.
  8. Using a 1-inch thick dough cutter, or biscuit cutter, push straight down through the dough and twist. The dough will pop out. Repeat until all dough is used.
  9. Place the biscuits on your lightly greased pan, or parchment paper, slightly touching. This will help the biscuits rise.
  10. Take two fingers and slightly press a dip in the middle of the biscuits. Brush with melted vegan butter and place in oven.
  11. Bake for 10-15 minutes, or until golden brown. Slightly cool and serve while warm.

Notes:

Biscuits can be stored in an airtight container or bag. However, it is recommended to enjoy them the same day!
